Make A Pan-Toasted Brie Sandwich.

1: You will need/n 50 ml olive oil
2 cloves of garlic, chopped
1 small red chilli, chopped
salt and freshly ground black pepper, to taste
2 tomatoes, sliced
4 thick slices of wholemeal bread
50 g brie cheese, cut into slices
18 basil leaves
25 g butter/n 1 shallow dish
1 pastry brush
1 frying pan
1 plate
1 weight, a tin can will do
1 spatula/nStep 2: Marinate the tomatoes/nInto the shallow dish, add the olive oil, garlic, and chilli. Season with salt and pepper. Stir, and then add the tomato slices. Turn the tomatoes so they are coated in the oil and leave to marinate for two hours.
Step 3: Make the sandwich/nBrush one side of the bread with some oil from the tomatoes. Place the cheese evenly on the oiled side of the bread. Top with the basil leaves, then add a layer of tomatoes and finally a second slice of bread, oiled-side down.
Step 4: Toast the sandwich/nPlace the frying pan on a medium heat and add the butter. When the butter has melted, add the sandwich. Cover with a plate and weigh down with a tin can./nCook the sandwich until golden brown (about 5 minutes.) Turn the sandwich and repeat for other side.
